This is a gift to delight the foodie in your life! Ever wanted to know which are the best cuts of meat for the family’s favourite dinner? The Butchery Techniques Cooking Class is set among 27 acres on the Mornington Peninsula, Victoria; and aims to introduce and develop a deeper understanding of meat cuts.
Experienced chefs break down a full lamb carcass, explaining the process and the different cuts of meat as they go, with in depth detail about which part of the animal produces each cut of meat.
There’s plenty of hands-on fun in the kitchen too; with students having the opportunity to bone a chicken and break it down into common cuts before marinating it with herbs picked from the on-site kitchen garden.
Student’s skills are then refined by boning a quail to be cooked in the woodfire oven for a delicious lunch overlooking the gorgeous 27 acre property; Green Olive at Red Hill; while enjoying a refreshing glass of wine.
What you need to know: The course takes place over three hours from 9am to 12noon and is followed by a gorgeous lunch overlooking the dam, vineyard and kitchen garden. Students should arrive at 8:50am for registration. Course notes are provided along with all equipment and chef’s apron being supplied. A cooler bag is recommended in order to transport food products home.
